uploader: file order should match the record

Describe the bug

This impacts both the standard uploader and Uppy. Uploaded files in the file panel show up in the order they were uploaded, but in the record landing page they show up in alphabetical order. This change can be confusing for users.

Steps to Reproduce

1. Upload files out of alphabetical order

2. View the preview to see that the order changes

The uploader should show the files in alphabetical order, or we should implement #2573

I reproduced this: the deposit file list follows the upload/selection order, and the landing page sorts alphabetically unless files.order is set.

I’d like to work on this in small PRs rather than drag-and-drop in one go. This is the #2573 approach rather than only sorting the uploader alphabetically:

Add files.order to the OpenSearch mapping in invenio-rdm-records so setting order doesn’t 500 on reindex
Persist files.order on draft update (same path as default_preview)
Make the uploader display/save that order (fall back to A–Z when empty)
Landing page order_entries already honors order.

Does this split look okay, or would you rather only sort the uploader alphabetically for now?

I think the larger change in #2573 is a perfectly fine approach, but it probably won't get out till v15 since there will be search index changes. Generally larger changes that impact more parts of the stack also take longer to review. I would also add being able to set the order in uppy to the list of improvements, since that will have the biggest user impact.

Add files.order to the search mapping
Persist order on draft save
Let users set the order in Uppy (biggest user impact)
Keep the classic uploader consistent with that
