I was a little surprised that there doesn't appear to be a command line/ hot key combo to copy text from the cell.

This was the case originally!
I opted for the click to allow copying "portions" of the response. With the click you can select individual markdown areas within the response or the entire response. Doing this with a single shortcut, proved difficult, partially also because selecting and copying as you would normally do on the terminal is pretty hard to get right with the wildly different terminal emulators that people use.
